Simply put, low fat diet has been considered as standard healthy diet for heart, but this is not really the case.  Low fat diet is comprised mainly from simple carbohydrates such as sugar, and rich omega 6 fatty acid from processed food using corn, or soybean.  These diet act as sandpaper irritating our arteries, causing chronic inflammation to our arteries.  Thus, due to these chronic inflammation, the cholesterol is obstructed by the inflammation, and adhere to our arterial wall and cause further obstruction, and leads to various heart disease.  Please read the following article.
